National Nutrition Month 2025 | Spotlighting our Dietitians

It’s National Nutrition Month, and we’re shining a light on our dietitians! Their hard work supports an inclusive dining program where our guests are empowered to eat and live well. From food allergy support to community events, learn how their hard work helps nourish and educate guests, no matter their diet:  

 

Krista Bretsch | The Citadel  

 

At The Citadel, Dietitian Krista Bretsch is a familiar face. Students know her from her special meet-and-greet Teaching Kitchen tables in our dining spaces, where guests can try out healthy, nutritious recipes or ask questions about allergens.  

From her time spent with these students, Krista realized a gap in the dining program – a space for gluten-avoiding students to eat pasta. Together with the dining team, she worked to establish a weekly Avoiding Gluten pasta station so guests can choose the options they’re craving.  

Sierra James | University of North Florida 

Dietitian Sierra James takes it upon herself to share her expertise with the community. A true mentor at heart, she counsels food-allergic students and collaborates with Student Health Services to train staff on dietary needs.  

Sierra takes it a step further by hosting educational pop-up tables for Diabetes Awareness Month and World Vegan Month.  

To ensure that future generations have the knowledge they need to support community health, she also mentors dietetic interns and supports their learning.  

Summer Manzke | University of Wisconsin Whitewater 

Summer Manzke works to broaden food access alongside our University of Wisconsin Whitewater team. Through Teaching Kitchens, she helps expand students’ palates by featuring recipes that avoid the top nine allergens and are predominantly plant-based. 

To ensure that all have access to nutritious food, she also champions the dining team’s meal recovery program, repurposing leftover food to provide balanced meals for guests facing food insecurity. 

Andie Montgomery | University of Arkansas 

To support the health of everyone on the University of Arkansas campus, Andie Montgomery is forging connections with university partners and departments.  

By partnering with Freshman Commuter Student Success, she’s connecting with guests who might not have the chance to meet her on campus. Even the university staff are getting involved – Andie’s Lunch and Learn sessions offer opportunities for faculty and staff to learn practical nutrition, cooking, and lifestyle skills.
